There is a simple truth that most people love either sweet or salty treats. Some people love both. It is for exactly this reason that several manufacturers of candy, potato chip or crisps, and corn chips have become huge, multi-million dollar corporations. The following corn chip recipe is a way to make your own far healthier and much cheaper corn chip snacks that also taste better than those you can purchase.There aren’t many ingredients and it is extremely easy to make the chips. Because these don’t have a lot of different ingredients, you have the luxury of making them without preservatives or additives that aren’t healthy and still exactly the way that you want them to taste.They also don’t take a long time or much effort to make, so you can be assured of freshness and flavor, at a lower cost than you’d spend at a store.Corn chips ingredients:1 cup corn meal~1 cups water1/2 tablespoon extra virgin olive oil or Canola oil1 teaspoon saltCorn chips instructions:1. Pour the cornmeal into a bowl and add 1/4 cup of cold water, stirring it up. Get the rest of the water boiling, then pour enough boiling water into the wet cornmeal to make a thick but fluid dough. (Mixing the cold water into the cornmeal first helps prevent it from getting lumpy.2. Stir in the oil and salt thoroughly.3. Pour the dough onto parchment paper and cover with another sheet of parchment paper. Roll it out until it is about 1/4 inch thick.4. Transfer the parchment paper and corn dough to a cookie sheet, then remove the top parchment paper. Use a knife to score the dough so it is scored in strips about 1/2 inch wide by 1 inch long.5. Bake at 375 F for about 10-12 minutes, until it is just beginning to turn golden, then remove from heat. If desired, these can then be sprinkled with more salt. Allow them to cool completely, then break the corn chips apart along the scores.Note: If you want, the strips of dough can be fried in hot oil rather than baking. They won’t be quite as healthful if you fry them since they will absorb some of the oil, but they will be more like store bought corn chips, especially if you use corn oil for frying, instead of olive oil.One thing that is really great about the homemade corn chips is that you can make them the way you want them. For instance, you can add chili powder if you want some bite. They can even be sprinkled with homemade barbecue seasoning if you want barbecued flavored corn chips. You are in control.This recipe can be doubled or tripled easily and it is simple to make. It is also far less expensive than the corn chips sold at the store, these taste better, and they are healthier. That is a winning combination.
